These S’more Brownies are a combination of recipes that have one thing in common: items I keep on hand. It’s a “simple as 1-2-3” dessert that packs a decadent punch. Baking these low-fuss brownies is a perfect opportunity to let little hands help in the kitchen.
The non-negotiable ingredients are akin to that of an actual S’more: Graham Cracker Base, Chocolate Center, Toasted Marshmallow Topping. The S’more Brownies call for 9 graham crackers – crushed, brownie mix [boxed is perfect, we’re busy, right?], and mini marshmallows. I’ve made this recipe three times now and I’ve finally found the sweet spot [no pun intended!]
The Graham Cracker Base
Combine 1/4 cup of melted butter and 9 graham crackers [that’s one sleeve, y’all]. I prefer to use my Cuisinart food processor to grind the crackers while simultaneously pouring the melted butter in.
Once the crackers are thoroughly saturated with buttery goodness, dump crumbs into your non-stick brownie pan. A proper pan is a crucial component to baking success. I grabbed my13x9 pan at Home Goods but you can snag a similar one here. Using your hands [and your little helpers too!], press the crumbs until the surface is covered. Place pan in the freezer for 10 minutes to allow the crust to set.
The Chocolate Center
This part is as straightforward as it gets. Follow the directions on your brownie mix. I chose to use 2 eggs [instead of 3] to achieve a more fudge-like brownie. Pour well-mixed brownie batter on top of the graham cracker crust. Gently nudge the batter as to not disturb the fragile base. Bake for 35 minutes [or until toothpick is clean] at 375 degrees.
By all means, lick the spoon – you only live once.
The Toasted Marshmallow Topping
Once the brownies have completed their bake time, remove from oven. Allow them to cool completely…or pop that pan in the freezer – you’ve got hungry littles waiting! When the brownies are cool to touch, completely cover the surface with mini marshmallows. Wanna go the extra chocolate-y mile? Sprinkle the top with crushed graham crackers and chocolate chips.
Place marshmallow covered brownies in the oven using the broil function. Watch. Them. Closely. Toasted-gooeyness to burnt-beyond-repair can happen in a matter of seconds. Remove from oven once marshmallows are puffed and toasted.

Serve to the Masses
Spray your knife with a non-stick spray and cut brownies into 12 squares. Serve with a side of ice cream [a la mode if you will] or milk. Children should begin bouncing off the walls in no less than 5 minutes. Proceed with caution with requests for seconds.
S’more Brownies Recipe

Ingredients
9 – Graham Crackers [~1 sleeve]
¼ cup of Butter – Melted
5 oz – Mini Marshmallows [~1/2 a bag]
1 box – Milk Chocolate Brownie Mix
Optional
1 – Graham Cracker crushed for topping
20 Chocolate Chips – for topping
Instructions
Instructions for the Graham Cracker Base
- Add 9 graham crackers to food processor.
- Turn on and while the crackers are churning, add melted butter until well mixed.
- Dump graham crackers and butter mixture onto a 13×9 brownie pan.
- Press crackers down until the base of the pan is covered, corner to corner.
- Place in freezer to set for 10 minutes
Instructions for the Brownie Mixture
- Follow instructions on your box mix.
- Top chilled graham cracker crust with well-mixed batter.
- Bake at 375 for 35 minutes or until toothpick comes out clean.
- Let brownies cool completely before topping with marshmallows.
Instructions for the Marshmallow Topping
- Cover brownie surface completely using 5 oz or more of mini marshmallows.
- Top with optional crushed graham crackers and chocolate chips.
- Place pan in the oven and turn on the broiler. Watch them closely.
- Remove S’more Brownies once the marshmallows are toasted and puffed.
Spray a sharp knife with non-stick spray and divide brownies into squares. Serve with a side of ice cream and hot fudge sauce drizzled on top.
